Hello Fresh now sells kits in the grocery store

 

Today, I successfully completed Meatless Monday thanks to this kit from Hello Fresh.  I am by no means a vegetarian, but I’ve made conscious choices to reduce my meat intake.   It is healthier and good for the environment.

On Mondays, our office gets bagels delivered, so that was my breakfast.  For lunch I had the second half of an eggplant sandwich that I got out Saturday night.  So I thought, let’s continue this and make this a true Meatless Monday.  I decided to make this Hello Fresh kit I bought a the store yesterday: chickpea couscous with brussels sprouts.

I have used Hello Fresh before.  In fact, I will be posting my review of the service later this week.  Though did you know that Hello Fresh now sells kits in the deli section of the grocery store? (Right now the kits are only available in Giant Food and Stop and Shop stores, but they are expected to expand to other retailers).  There are only five options available in stores, which pales in comparison to the vast recipe collection if you subscribe to their service.  However, the options in the store are ones I had not tried when I had subscribe to the service.

This couscous kit was so easy to make.  There are only four steps and four main ingredients: Israeli couscous, chickpeas, brussels sprouts, and feta (four foods that I love!)

The kits have just about everything you need to make this meal: aside from salt, pepper, and a little bit of oil and butter.  I roasted the Brussels Sprouts and chickpeas in the oven.   The Brussels Sprouts were seasoned with thyme, and the chickpeas were seasoned with smoked paprika.  Smoked paprika is an ingredient that I fell in love with when I expanded my cooking taste as an adult.

While the vegetables were roasting, I started on the couscous.  First, I sautéed the diced shallots and garlic in some butter before cooking the couscous in a vegetable broth.  After the couscous and vegetables cooked, I combined them, added the feta, and finished off with a squeeze of lemon.

A great aspect of these kits is that they make two servings, so I already have lunch ready for tomorrow! This is a simple kit with few ingredients, but there is a good amount of flavor and texture to this dish.  The couscous with the feta has almost a creamy feeling.  When I get a good bite with the vegetables, it is like a party in my mouth.

I had a long Monday back at work.  I was so happy to be able to prepare a quick and delicious meal with plenty of time afterward to relax before another workday.  I was left feeling nourished and satisfied.  This is the second time I have bought this kit at Giant, and I am sure I would buy it again or even pick up the ingredients to make my own flare to this recipe.
